According to local residents, around the 2000s, many fishermen from Binh Dinh moved to Phu Quoc to live and brought with them the familiar dish "Bun Tom." However, due to differences in ingredients and tastes, they adapted the preparation method to better suit the conditions and preferences of the local people. From there, the dish "Bun Quay" was born and became a unique specialty of Phu Quoc.

The dish "Bun Quay" combines harmoniously fresh rice vermicelli, seafood (fresh shrimp, dried shrimp, minced fish paste, horse mackerel, squid eggs, etc.), raw vegetables (bean sprouts, water spinach, coriander), and dipping sauce. The special feature of this dish is that the dipping sauce is self-mixed according to each person's taste. In a small bowl, various spices such as soup powder, sugar, MSG, lime, and ground chili are added, then swiftly stirred to dissolve and create a tempting red sauce with a balanced sweet, sour, spicy, and salty taste. When eating, a sprinkle of ground Phu Quoc pepper is added to enhance the flavor.


Furthermore, the broth is a crucial factor that contributes to the deliciousness of "Bun Quay." The broth is simmered from pork bones and shrimp heads, infused with lemongrass and purple onions. The broth has a sweet and clear taste, with a fragrant aroma of lemongrass and shrimp.


To enjoy "Bun Quay," the vermicelli is placed in a bowl, topped with finely chopped green onions, and then hot broth is ladled on top. Next, the pre-cooked or boiled seafood is added, followed by the pre-mixed dipping sauce. Finally, it is served with fresh vegetables and chili. "Bun Quay" has the sweetness of vermicelli, the aroma of seafood, the tanginess of the dipping sauce, and the crunchiness of raw vegetables, creating a unique and unforgettable taste.
